Step One - Make a Meatloaf
Barbequeing a meatloaf makes it taste nice and smokey, so
there is no need for a fancy recipe. The one below works fine.
Burning Loaf Approved Meatloaf Recipe
This recipe is for 5 fairly hungry guys. It makes about a 4½ pound
meatloaf. Double, triple, quadruple (or whatever) it as needed. If you
are more than doubling it, make sure you have a container large enough
to mix the ingredients. As it is, this recipe is best made in a 4 quart
mixing bowl. So do the math: if you are more than quadrupling it, you
will need to get creative, e.g. a bucket or a cooler or a bathtub...
1 pound Jimmy Dean Sausage
(or similar)
2 pounds (80 percent lean) ground beef *
16 oz tomato juice or tomato sauce
1 ½ cups bread crumbs
2 eggs
1 small onion, chopped (½ cup)
1 teaspoon salt
1 teaspoon pepper
Mix everything together with your clean hands—there really is no other way.
Shape into a loaf on foil covered grill.
